About the Recipe

Cake. Citrus. One-bowl baking. If these words send a shiver down your spine, then this recipe is for you. It is a very easy recipe that can be different every time you make it if you swap the oranges for lemons, limes, grapefruit, or a mix of juices. Remember to use exact measurements to get perfect results.

Ingredients

For the cake


  • 226 gr unsalted butter, room temp

  • 175 gr sugar

  • 4 large eggs

  • Zest of 1 large Oranges

  • 225 gr flour

  • 2 tsp baking powder

  • Pinch of salt


For the Orange Drizzle

  • Juice of 1 large orange

  • 75 gr sugar


For the Orange Glaze

  • Juice of 1 large orange

  • 200 gr powdered sugar


Preparation

1. Preheat the oven to 350°F. Line a loaf pan with parchment paper.


2. For the cake, in a large bowl, beat butter and sugar with a hand mixer for 5 minutes. Add orange zest and 1 egg at a time, and beat until combined. Sift flour, baking powder, and salt, and fold to combine. Transfer the batter to the loaf pan and bake for 45-50 minutes.


3. While the cake is baking, prepare the Orange Drizzle by whisking orange juice with sugar in a small bowl. Set aside.


4. While the cake is still warm and in the loaf pan, poke holes with a skewer. Soak the cake with Orange Drizzle. Leave the cake in the pan to cool.


5. For the orange glaze, whisk orange juice and powdered sugar. Remove the cake from the pan and decorate the cake with the glaze.
